Show the difference between two surfaces

Hi,
I have two data sets (existing and proposed condistions of a closed mine site). Just wondering if there's any easy way to create a surface or point grid showing the difference between the two surfaces?
Example: current surface elevation 192 m, proposed surface elevation 190 m, different 2m.
Any ideas? I am working in version 11, but also have Arcgis desktop and Surfer to work with.

There is a File->Combine Terrain (under the Terrain Analysis menu in v14) where you can subtract 2 terrain surfaces and get the difference.
